Crawfish season is in full swing here in Louisiana & I have been dying to eat some, so last night we went to a great local restaurant called Shane's & the crawfish was soo yummy!

Here's my 3 pounds & yes, I ate every one of them! :-)
Fritter wasn't too fond of them & thought we were crazy for eating bugs! LOL

Double the Trouble, Double the Fun!

Today has been a fun Friday! My friend Michelle called me last night in a dilemma because her sitter was unable to keep her little boy Drew today. All I had planned was lunch with my mom & sisters, so he came to play today & Fritter has had a ton of fun!

They did great at lunch together & had fun entertaining each other with their straws...LOL

We love our buddy, Drew & was so excited he could come & play!

They are now quietly napping & I'm enjoying some peace & quiet! :-)

2 Year Well Check-Up & 200th post!

Wow! It's my 200th post! How exciting! :-)

We had Fritter's 2 year old well check up today! Thankfully she has only gone to the doctor for well-check up appointments & our doctor was so happy about that! Me too! She did have to get her last immunization today until she is 4 & she was such a trooper! Didn't even cry! I'm so thankful for a healthy, fun, and happy girl!

She weighed 24lbs (20%) and was 33.5 in. long (40%). My little petite girl! I tell the doctor she is going to be one of those girls that eats the whole table and is till a size 2 when you grows up! LOL

She is talking more and more everyday & communicating so well with me! Here are some of the funny things she is saying now:

  • When I saw let's take a bath she says..."Purple in it!" (We have the Crayola color bath tabs & she's obsessed! LOL)

  • She loves to eat & says "Eat Now" about a bizillion times a day! We are working saying Please with it & then it becomes "Eat Now Please!" LOL

  • My father in law is currently working in Arkansas and she misses her Papaw, and the other day I said the word Arkansas talking about something else & she said, "Papaw in Arkansas?" My husband & I just looked at each other like? Oh my! She remembers where he is! We thought she was a genuis! LOL

  • She is very into me sitting and playing with her, so if any toy comes out she says, "Sit Down, Mommy!" & so I sit & play! How could I not follow those sweet orders! hehe!

  • When she plays with her kitchen pots and spoons she cooks away saying, "Chicken Nuggets, Chicken nuggets..." LOL It made me laugh b/c she does eat more than just chicken nuggets! LOL
Speaking of food:

  • This is the night before her birthday at one of our favorite restaurants, Newks, putting back a whole sandwich by herself! We were amazed! LOL

  • She loves lettuce & will eat it right out of my salad & she loves brocoli & always ask for more!

  • She loves to eat pears, apples, and oranges & loves to "hold them" by her self & eat it! :-)

  • You don't care for peanut butter & jelly, but would take lunch meat & cheese over it any day! (So not my child! LOL)

Well, we have our closing in 2 weeks from today, so I've been busy working on some last minute craft projects before we get to packing, so I hope to share those in the next few days! Stay tuned! :-)

How to make a Monkey Cake!

For Fritter's birthday I had to end up making her monkey cake, since all of the cake people I knew were already busy. It kinda freaked me out at first, but after lots of research and thinking, I came up with her cake! It was really simple & fun to do!

First off, I store bought everything...You could bake a homemade cake, but for time & to keep my sanity, I just bought Betty Crocker Super Moist Butter Recipe Yellow cake.

I then put it into 2 (9in) round cake pans & cooked them for 25-30 mins.

After the cakes have cooled, I flipped it over & put it face up on my board. I then took the other cake & with the top of my sugar bowl (you could use a normal bowl, or just guesstimate!) I cut out to half circles to form the ears.
Then after forming  you should have a cake that looks like this!
Now I just bought the Better Crocker Whipped Chocolate Icing instead of doing homemade, but of course you could do both. I really suggest buying one of those angled spatula/knives to ice the cake with. I got mine at Michaels for not much & it made this part so much easier! 

After you ice the whole face with chocolate, then take the White Icing and mix a little bit of peanut butter in a bowl with it & ice out a circle. Fill in and smooth.

Then take some of the white icing your icing bag & draw out the white eyes. I used brown M&M's for the eyes.
You're almost done!

I then used a pink jellybean for the nose & just drew on the smile!
If you want a girly cake, then you can just make a bow & add pipe cleaner through the back and then just pushit down onto the cake!

There is it! A girly monkey cake! :-)

It turned out to be fun & easy to do & Fritter just loved it! :-)

Today we had such a fun day celebrating Fritter's 2nd birthday at the park! The weather was beautiful & she had a great time playing in the sand, running and sliding with all of her friends & family!

The Birthday Outfit

Every birthday girl needs a birthday outfit, so fresh off the sewing machine tonight, I finally finished her girly monkey outfit for her party in the morning!

I used the monkey applique I purchased from Applique Art by Kim. Great shop with tons of applique patterns! Then I used a pink with white polka dots ribbon to make a bow for the monkey. Now I am terrible with ribbon, but some how with the help of You Tube & a little bit of patience, I some how made this bow! If you asked me how, I probably couldn't tell you. I just magically happened! LOL

I made her ruffle pants using the Sandi Henderson Ruffle Capri pattern. She is going to love it when she puts it on in the morning! To top it all off, I got her a CUTE little clip from a fun store with lots of cute hair acessories on Etsy called Sprinkle Designs. It is a hand sewn felted girl monkey face for her to wear in her hair! So fun!

Oh My, How Time Flies By!

It's amazing to me how this sweet baby "Fritter"

has become this "Big girl" Fritter
in what seems like over night! Now I know what all those momma's meant when they said it flies by! It makes my heart hurt looking back at all her baby pictures, but also excited about all the new things she will learn & do this year as we head full force into the "Two's"!

We will be having a little girl Monkey Party for Fritter on Saturday at a local park! I'm excited about it & so is she! She keeps talking about the park & saying "Happy Bitday!" LOL

I ordered her invitations from the sweetest lady at Barbara Neely Designs on Etsy. Everyone should definitely check her out for invitations! She has so many fun ones to choose from! They were printed on very nice cardstock & are great quality for a reasonable price!

So we have been going "bananas" around here the last few days finishing up all our preparations & tomorrow I will be baking & decorating her cake! Sooooo....Let's hope that goes well, or we will be heading to Wal-mart! :-)

Great Recipe!

Whew! What a busy few days we have had around here! We have been all in a hussle & bussle getting ready for Fritter's 2nd birthday party on Saturday! (More details of all the details coming soon! :-) )

I just wanted to blog real quick this GREAT recipe that I tried last night when we had our friends over for dinner! I am always leery of trying new recipes when guests come over, but once again Kraft Foods pulled through again! I just love that Food and Family Recipe magazine!

Here is the recipe:

Chicken Parmesan Bundles

What You Need!
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1-1/4 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
6 Tbsp. KRAFT Grated Parmesan Cheese, divided
 6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness
1 egg 10 RITZ Crackers, crushed (about 1/2 cup)
1-1/2 cups spaghetti sauce, heated

Make It!
HEAT oven to 375ºF.
MIX cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
BEAT egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.
BAKE 30 min. or until chicken is done (165ºF). Remove and discard toothpicks, if using. Serve topped with spaghetti sauce and remaining mozzarella.

These are oh, so yummy! I will definitely be making these again soon!

We enjoyed a fun date night eating at our friend's house tonight, while Fritter is staying with her Nonna & Big Daddy! She has so much fun over there playing in their big backyard and looking at all the flowers my mom has planted! The Morning Glories she helped her plant are already sprouting...I'm hoping she gets a green thumb & maybe she can help me! LOL :-)

My hubs and I are going on a breakfast date in the morning & I may drag him along to some garage sales too! :) It should be a fun time! A great ending to a busy week!

Happy Easter Weekend!

Today I have been busy getting ready for our fun-filled weekend! Our church is holding a marriage retreat at a camphouse on a beautiful lake this weekend, so we will be heading out there this afternoon & spending the rest of the weekend out there with about 8-9 other couples. It will be such a great time of fellowship and learning. I know I have so much more to learn about how to be a Godly wife. I'll hopefully be able to share alot of great things I learned in the coming week! :-)

 I hope everyone has a wonderful Easter! What a great gift of Christ we have to celebrate and the fact that death couldn't contain Him! He is Risen! I just makes my heart full of joy!
